法比歐 Fabio Toro

Born and bred with Trebbiano and Montepulciano in Abruzzo, Central Italy, he moved to London in 2006, where he worked in two of the most beautiful and iconic restaurants of the British capital: The Cinnamon Club (Indian cuisine) and Wiltons (British cuisine, Oyster and Champagne Bar).

At The Cinnamon Club, he was fascinated by the wine pairings with Indian food and, as the wine list featured off-the-beaten-track wines and regions, Fabio decided to join the sommelier team in 2010. From then on, he chose wine as his career, tasting and studying avidly, attending as many events as he possibly could and visiting wineries all over Europe. He successfully completed WSET Level 2 Award in Wines and Spirits and WSET Level 3 Award in Wines and Spirits at the WSET headquarters in Bermondsey Street.

At Wiltons restaurant, Fabio was the Assistant Head Sommelier and tasted the most classic fine wines, especially French ones. After he achieved the WSET Diploma in Wines and Spirits in 2018, he moved to Taiwan. He is now in charge of the events and wine selection at Thirsty Scholar, a renowned importer based in Taichung.

Fabio attended the WSET educator training course in 2023, becoming a WSET certified educator and assessor. In 2024, he judged at the Winelovers Wine Awards in Budapest. His favourite regions are Bordeaux and the Rhone Valley in France, Barolo and Montalcino in Italy. He also has a soft spot for wines from South Africa, Greece, and Madeira.
