One of my own epiphanies in wine tasting came from a glass of ‘82 BERINGER Cabernet Sauvignon. At the time it was already nearly 30 years old, but still full of youthful vigor. I decided then that without fruit in front there’s no point in aging a wine. What are you preserving?
The Cabernet Sauvignons today were of course babies, and though wonderfully presentable even now because of their luscious blackberry and currant aromas, behind and beneath the glamor runs a current of powerful but silky smooth tannin, and these two characteristics together create the promise of decades of growing complexity.
